UnHitched Brewing Company was drafted out of the love of craft beer and the desire to re-invigorate the development of our downtown community of Louisville, OH. With special attention to local history and nostalgia, the name "UnHitched" pays homage to one of Louisville’s original brewers, George Dilger. He delivered his beloved beers by horse and wagon. As our name indicates, we have “unhitched” the wagon and hung up our yoke at the old Louisville Bowling Alley. We have laid our roots in this public house of unique and creative beer and food. Our menu items are full of flavor sourced by local talent. Come sit, get lost in the atmosphere, the food, and of course the beer. UnHitch yourself from the grind...we did.

 Brewing Program

UnHitched Brewing Company’s Core Brewing Values rest solidly on quality, integrity, and a deep connection to place and community. We brew raw, under-manipulated beers with well practiced technique. The vision for our brewing program is to remain well versed in the foundational styles that have driven this trade for centuries, while expanding the dialogue with modern equipment, well thought out creativity, and bottomless passion.

We plan on having 12 taps flowing. 8-10 will be UnHitched beers. The rest will be guest taps from our friends in the industry. And for the non-beer drinkers, we have you covered. We will feature a select number of hand crafted cocktails and wine.


 Food Program

At UnHitched, our goal is to always offer the highest quality and freshest food attainable. At the heart of our food program is our pizza oven and charcuterie/cheese boards. A family style service structure allows for our offerings to flow freely into the guest experience and allow for a relaxed and refined setting that complements the food, beverage and culture of UnHitched.

Curing and Larder

Our Curing and Larder Program was developed as a natural fit, finding its roots in a reverence for the old methods and styles of butchery, farming, and larder skillsets. At its heart is an intent to develop a deeper personalized connection to our community through utilization, appreciation, and celebration of locally sourced ingredients.

All butchery, curing, and larder is done in-house. You will find our cured meats on display that are used throughout the menu.

Louisville is a parking lot metropolis. There are actually 56 parking spots within a 30 second walk to one of our TWO entrances. We are adding a rear entrance on the brewery so parking directly behind us will be a breeze. The city is even repaving their entire parking lot in 2019.
