Located in Downtown Canton

The Woodshop is a project by UnHitched Brewing focused on the fermentation of beers in wooden vessels. Fermentation will take place in foeders and other smaller oak barrels. Our primary emphasis will be crafting distinctive lagers, saisons, and sours.

The brewing process begins at our main facility in Louisville. Following the initial stages in the brewing process, the wort undergoes cooling and is transported to the Woodshop where it is transferred into the wooden fermentation vessels. Yeast is introduced, and the real magic takes place.

The Woodshop is located inside the Deli Ohio building, just one block from Centennial Plaza in downtown Canton.

During the day (seasonally), guests can enjoy a beer alongside a fresh sandwich, and in the evening, Mike’s Pizza serves up classic New York–style pies and familiar pizza-shop favorites.
